Makes 6
1 package premade puff pastry*
1 can apple pie filling (you can use any flavor pie filing)
Course Sugar
*you can now find premade puff pastry both frozen from companies like Pepperidge Farms, or in the refrigerator section along the pizza doughs and pie crusts, by several companies. This makes recipes like the above, a quick, but extremely delicious, simple task for every day eating.
If you are using frozen puff pastry, allow to come close to room temperature, unfold and lay flat on the parchment it comes in. It will be a rectangle shape, and you will cut it into thirds before slicing it in half longways, giving you 6 equal pieces.
Preheat your oven to 400* (if you have a convection option, use it with the temp set at 350)
Place a hefty 2 Tablespoons of apple filing into the center of each piece of puff pastry. Make sure you have some extra sauce added onto the apples. And you will not use but 1/2 the can.
Carefully fold the puff pastry in half, making a triangle, and gently pinch the sides together to seal them. Place each one on clean parchment placed on a cookie sheet. Lightly wet tops of the pastry with your fingers dipped in water; sprinkle with the coarse sugar.
Bake at 400 (350 convection) for 15-18 minutes or until the puff pastry is golden brown.
You can eat these turnovers as is, or you can add a glaze once they are cooler but still warm. The glaze is a simple one of 1/2 cup powdered sugar + 1 T water (or flavored creamer works to give an added level of fun). Mix well with a spoon in a cup, add additional powdered sugar if it’s too runny, a smidge liquid if it’s too stiff to drizzle over the turnovers). I prefer it to be a thick drizzle, so it doesn’t disappear on the warm turnovers. You can add as much or as little glaze over the turnovers as you prefer.
These can be refrigerated, but I find they do fine covered with a glass dome on the counter, as they get eaten quickly.
You can also change out the apple filling for any other favorite pie filling at your store. I have been known to also use a combination of a spoonful of refrigerated cheesecake filling with either pie filling or favorite jam in place of the pie filling.
The idea here is that it is to be a quick & simple breakfast/dessert that requires very little cost or energy but still results in a fabulous meal.
